Zola’s Feasts Butternut Soup
1 kg butternut, peeled and chopped
2 Tbs olive oil
Salt and pepper to taste
1 onion, chopped
1 thumb size piece of ginger, peeled and chopped
2 garlic cloves, sliced
1 tsp Zola’s Feasts Flavourbomb Spice Mix
1 L vegetable stock
In a pot, heat olive oil then add onion, ginger and garlic then sauté until softened and beginning to brown around the edges.
Add Zola’s Feasts spice mix and sauté on low heat to toast the spices.
Add roasted butternut, veg stock and season to taste.
Simmer for 5 minutes then blend until smooth.
Serve with garnish of your choice.
