Marmalade Glazed Gammon


Serves 4-6

2kg boneless uncooked gammon
1 orange (zested, 1/2 sliced, 1/2 juiced)
4 slices fresh ginger
2 bay leaves
4 cloves
About 1.5L cold water
2 Tbs chopped fresh ginger
1/2 cup sugar
1 cup orange marmalade
Salt and pepper


Place the gammon, orange zest, orange slices, sliced ginger, bay leaves and cloves into a large pot, then add enough water to cover.

Cover the pot with a lid, place onto high heat, then bring to the boil.

Turn heat down to medium, then simmer for 1 hour.

Remove from the pot, discard the liquid, then remove the netting/string from the gammon.

Preheat oven to 200c.

Cut off the skin and remove any excess fat and discard.

Mix together the orange juice, chopped ginger, sugar, marmalade and seasonal with salt and pepper to taste.

Pour the glaze over the gammon, then roast in the oven for 30-40 minutes or until the glaze is sticky and golden.

Baste the gammon with the glaze, then carve and serve.
