Zola’s Feasts Spiced Spinach & Mushrooms
Ingredients
Serves 4
2 Tbs olive oil
1 onion, peeled chopped
1 red pepper, deseeded and diced
2 Tbs Zola’s Feasts Flavourbomb Spice Mix
1/2 punnet button mushrooms, sliced
1 vegetable stock cube
2 cups frozen chopped spinach
Salt and pepper to taste
Instructions
Heat olive oil in a pot, then add onion and pepper then sauté until onion softens and begins to brown around the edges.
Add Spice mix and mushrooms, then sauté over medium heat for 5 minutes.
Crumble in the stock cube, then add the frozen spinach and stir well to combine.
Turn heat down to low, cover with a lid, then leave to cook for 5 minutes.
Taste for seasoning and add as needed
