Spicy Eggs with Chorizo


Serves 4

2 Tbs olive oil
200g chorizo, chopped
1 red pepper, chopped
1 Tbs Zola’s Feasts Curry Powder
2 Tbs Zola’s Feasts Flavourbomb Spice Mix
1 tin chopped tomatoes
1 Tbs sugar
Salt and pepper
4 eggs
Avo to serve (optional)


Heat a pan, add olive oil, chorizo and red pepper, then sauté until the pepper softens and the chorizo begins to brown around the edges.

Add Zola’s Feasts curry powder and spice mix then sauté for a few minutes over low heat.

Add tomatoes and sugar then simmer over medium heat for 5 minutes.

Season with salt and pepper to taste.

Crack eggs into the sauce, cover with a lid, then cook gently until the eggs are cooked to your liking.

Serve with sliced avo on top.
