Zola’s Feasts Egg Chutney
4 large eggs
2 Tbs olive oil
1 onion, sliced
1 Tbs chopped ginger
1 Tbs chopped garlic
2 tsp Zola’s Feasts Flavourbomb Spice Mix
1 Tbs Zola’s Feasts Curry Powder
4 fresh tomatoes, chopped
2 Tbs chopped fresh coriander
Salt to taste
Remove from the boiling water, then plunge into cold water to cool.
Heat a pot then add oil. Add onions, ginger and garlic, then sauté over medium heat until softened and starting to brown around the edges.
Add spice and curry powder, then sauté for a minute. Stir in the tomatoes, season to taste then simmer for 5 minutes.
Peel the cooked eggs then add to the chutney and simmer for 2 minutes.
Toss in the coriander and serve.
