Zola’s Feasts Crispy Fried Chicken Wings & Coleslaw

Serves 4-6

For the chicken:
16 chicken wings
2 cups buttermilk
4 Tbs Sriracha sauce
8 Tbs Zola’s Feasts Flavourbomb Spice Mix
3 cups flour
Salt and pepper
Oil for frying

For the coleslaw:
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup grated carrot
1/2 onion, finely chopped
3 Tbs chopped parsley
1 cup plain yoghurt
1 cup mayonnaise
2 Tbs honey
2 Tbs white wine vinegar

Place the chicken into a bowl, then add the buttermilk, Sriracha sauce and 4 Tbs Zola’s Feasts Spice Mix – leave to marinate for at least two hours or preferably overnight.

Mix together flour, 4 Tbs Zola’s Feasts Spice Mix, salt and pepper.

Take 6 Tbs of the buttermilk marinade and stir into the flour mixture to form some large flakes in the flour mixture.

Dip each chicken wing into the flour flakes, making sure to coat well, then deep fry until golden brown and the chicken is cooked through – make sure the oil isn’t too hot so as not to burn the outside before the inside cooks, about 180c is the ideal oil temperature for frying.

For the coleslaw, combine all the ingredients into a large bowl, then toss together well.
