Mushroom & Garlic Samp with Spiced Chicken
4 chicken breasts
3 Tbs Extra Virgin olive oil
2 Tbs Zola’s Feasts Flavourbomb Spice Mix
2 cups dried Samp
1 L water
4 Tbs Extra Virgin olive oil
1 onion, sliced
1/2 punnet mushrooms, sliced
2 cloves garlic, finely chopped
1 Tbs dried oregano
1 cup vegetable/chicken stock
Salt and pepper to taste
Wash the Samp, then place into a pot and cover with water, bring to the boil, then simmer for about an hour and a half or until the Samp is tender… you may need to top up the water during cooking.
Drain the cooked samp and set aside.
Preheat oven grill to 200c.
In a pan, heat 4 Tbs olive oil, then add onions and mushrooms and sauté until softened and beginning to brown around the edges.
Add the garlic and oregano, then sauté for another minute. Add the drained Samp and stock, then cover and simmer for 10 minutes.
Place the marinated chicken into a baking dish, then cook under the hot oven grill for 8-10 minutes until the chicken is golden and cooked through.
Season the Samp to taste with salt and pepper before serving with the chicken.
