Zola’s Feasts Sesame Crusted Trout with Noodle Salad


serves 4

For the trout:
2 Tbs mayonnaise
1 Tbs Zola’s Feasts Spice Mix
4x 150g salmon trout
1/4 cup sesame seeds

For the noodles:
1/2 red pepper, sliced
1/2 yellow pepper, sliced
4 baby marrows, sliced lengthways
2 Tbs olive oil
1 tsp Zola’s Feasts Spice Mix
4 Tbs soy sauce
2 Tbs rice vinegar
3 Tbs honey
1 tsp grated fresh ginger
Chopped fresh chilli to taste
200g noodles, cooked and cooled


Preheat oven grill to 200c.

Mix together the mayonnaise and Zola’s Feasts Spice Mix.

Place the fish onto a lined baking tray, skin side down.

Spread the Mayo mixture onto the flesh side of the fish then sprinkle generously with the sesame seeds.

Press the seeds gently onto the fish to ensure that they stick.

Roast fish under the grill for 6-8 minutes until the sesame seeds are lightly golden and the fish is cooked through – do not over cook the fish.

For the noodles, heat a griddle pan until smoking. In a bow, toss together the peppers, baby marrow and Zola’s Feasts Spice Mix, then grill the veggies on both sides until charred and cooked through.

Set aside to cool to room temperature.

In a large bowl, whisk together the soy, rice vinegar, honey, ginger and chilli. Toss the noodles in the dressing along with the grilled peppers and marrow.

Serve the trout on top of the noodles.
