Chutney Chicken


Serves 4-6

12 chicken drumsticks
1 Tbs olive oil
2 Tbs Zola’s Feasts Spice Mix
1 cup fruit chutney
1/2 lemon, juiced
1/2 cup water


Drizzle chicken with olive oil, then sprinkle with spice and toss well to coat.

Heat a pan then add the chicken and brown on both sides until golden.

Whisk together the chutney, lemon juice and water, then pour over the chicken.

Cover with a lid, then simmer gently over medium heat for 15 minutes.

Remove the lid, then turn up the heat, simmer with the lid on until the the sauce becomes thick and sticky and coats the chicken, turn the chicken as the sauce reduces and thickens so it coats the chicken well.
