Serves 2

1 Tbs olive oil
1 chicken breast, diced
2 Tbs Zola’s Feasts Spice Mix
I jar tomato salsa
1 Bag Nachos
1 cup grated cheddar
1/2 punnet cherry tomatoes, diced
1 spring onion, chopped
1 avocado, peeled and diced
Juice of half a lemon
Salt and pepper
Sour cream to serve

Sprinkle with Zola’s Feasts Spice mix, then sauté until chicken is browned and cooked through.

Remove from the heat, then stir in the jar of tomato salsa.

Preheat oven to 180c, layer half of the nacho chips into an oven-safe dish or pan, then sprinkle with half of the chicken and cheese, top with more chips and remaining chicken and cheese.

Bake in the oven for 10 minutes or until cheese is melted.

Mix together the tomatoes, spring onion, avo, lemon juice and season with salt and pepper then sprinkle over the nachos, dollop the sour cream on top and serve immediately.[/et_pb_text][/et_pb_column][/et_pb_row][/et_pb_section]
