Toad in the Hole with Onion Gravy

Ingredients

Serves 4

For the toad in the hole:
8 sausages
1 Tbs olive oil
4 Large eggs
1 cup milk
1 cup cake flour
1 tsp salt

For the onion gravy:
2 Tbs olive oil
2 onions, peeled and sliced
2 garlic cloves, finely chopped
1 Tbs fresh thyme
1 Tbs flour
2.5 cups stock
Salt and pepper

Instructions

Preheat oven to 200c.

Place the sausages into a roasting dish then drizzle with olive oil then roast for 20 minutes to brown the sausages.

In a bowl, whisk together the eggs, milk, flour and salt to form a smooth batter.

Pour the batter over the sausages, then quickly return to the oven and bake for 40 minutes until the batter is puffed and golden – do not open the oven until the batter is fully puffed.

For the Gravy:
Heat olive oil in a pan, then add the onions, garlic and thyme and sauté over low heat until onions soften and begin to brown and caramelized around the edges.

Add the flour and cook over medium heat to cook out the flour.

Add the stock, stir well, then simmer for 20 minutes. Season with salt and pepper to taste.
