Strawberry & Mint G & T


Makes 1

2 strawberries, hulled and quartered
4 mint leaves
25ml simple syrup **
25ml gin
125ml India Tonic


Place the strawberries into a serving glass, then muddle and crush gently to release flavours.

Mix in the syrup and gin, then top with tonic. Add ice to chill.

** Simple syrup:
Heat together 1 cup water with 1 cup sugar until dissolved – add a vanilla pod (optional). Chill to room temperature, then store in the fridge.
