100g castor sugar
2 Large Eggs
400g cake flour
80g custard powder
10g Baking powder
Cream together butter and sugar until light and creamy.
Beat in eggs.
Mix together flour, custard powder and baking powder, then mix into the wet ingredients.
Knead lightly with your hands until the dough comes together.
Roll tablespoon fulls of dough into balls, then place onto a greased baking tray.
Press each cookie with a floured fork to flatten slightly.
Bake for 15 minutes until the cookies have set.
Cool on a wire rack.
Once cool, store in an airtight container
