Chocolate Waffles


Makes 6

2 cups cake flour
½ cup cocoa powder
¼ cup brown sugar
1 tsp baking powder
½ tsp bicarbonate of soda
Pinch salt
3 large eggs, separated
2 cups buttermilk
½ cup canola oil
1 tsp vanilla extract
100g milk chocolate, finely chopped


Whisk together flour, cocoa powder, brown sugar, baking powder, bicarbonate of soda, and salt in a large bowl.

Make a well in the centre and add egg yolks, buttermilk, oil, and vanilla. Mix until just combined – do not overmix.

Fold in the chopped chocolate.

Whisk egg whites in a separate bowl until soft peaks form, then fold into the waffle batter.

Cook in a heated, greased waffle iron (you can also use this mixture to make flapjack pancakes, just cook in a greased pan).

Serve with ice cream and syrup
