Flavourbomb Spiced Chicken with Savoury Mealie Rice


Serves 4

For the chicken:
8 chicken thighs and drumsticks
2 Tbs Zola’s Feast Flavourbomb Spice
2 Tbs olive oil

For the Mealie Rice:
2 Tbs olive oil
1 onion, chopped
1/2 red pepper, diced
1/2 green pepper, diced
2 garlic cloves, chopped
1.5 Tbs Zola’s Feasts Flavourbomb Spice
150g sliced mushrooms
1 cup Maize Rice, rinsed and drained
1 cup sweet corn kernels
2 cups chicken stock
Salt and pepper


Preheat oven to 200c.

Season chicken with spice mix and drizzle with olive oil. Toss to coat then place into a roaring dish.

Roast in the oven for 1 hour until skin is crisp and chicken is cooked through.

Heat olive oil in a pan, then add onions, peppers and garlic and sauté until softened.

Add spice mix and mushrooms, then sauté for another minute.

Add mealie rice then stir well to coat in the spices.

Stir in the chicken stock, add the corn.

Cover with a lid and leave to simmer gently for 30-40 minutes or until the mealie rice has absorbed the stock and is cooked through.

Use a fork to fluff the mealie rice after cooking.

Season to taste with salt and pepper.
