Mushroom Eggs


Serves 4

2 Tbs olive oil
1 Tbs butter
250g sliced mushrooms
1 garlic clove
1 tsp fresh thyme
Salt and pepper
4 large eggs (or more)


Heat olive oil and butter in a pan, then add the mushrooms and sauté until starting to brown.

Add garlic, thyme and season with salt and pepper.

Separate the eggs to make space for the eggs, then crack eggs into the pan.

Cover and allow to cook until eggs are done to your liking.

Serve with crusty bread.
