Ikabishi namaZambane (Cabbage & Potatoes)


Serves 4

2 Tbs oil
1 onion, sliced
1 tsp chopped garlic
1 Tbs curry powder
2 potatoes, peeled and chopped
1 veg stock cube
1.5 cups hot water
1/2 head white cabbage, chopped


Fry onion in oil until soft, add garlic and curry powder, sauté for a minute.

Add potatoes and stir to coat in spices.

Dissolve stock cube in water, then add to the potatoes, stir, then cover and simmer for 5 minutes.

Add cabbage, stir then cover and cook for another 10 minutes until the cabbage is tender and potatoes are cooked through.
