Lasagne Soup


Serves: 4

2 Tbs olive oil
500g beef mince
2 garlic cloves, chopped
1 pkt KNORR Naturally Tasty Lasagne
1 tin (400g) chopped tomatoes
2 Tbs sugar
600ml water
Salt and pepper
4 lasagne sheets
2 Tbs chopped fresh basil
100g mozzarella cheese, diced
50g parmesan cheese, grated


Heat oil in a large pot, and then add the mince and cook, while stirring until browned.

Add the garlic and Knorr Naturally Tasty Lasagne and stir to coat the mince.

Add the tomatoes, sugar and water, then bring to the boil and simmer for 5 minutes.

Break up each lasagne sheet into four pieces, and then stir into the pot. Simmer again for about 7 minutes or until the pasta has softened. If the soup gets too thick, add a little more water to ensure the pasta cooks.

Stir in the chopped basil, mozzarella and parmesan, then season to taste.

Serve ladled into bowls, sprinkled with extra parmesan cheese
