BBQ Meatball Sub
Ingredients
500g beef mince
Salt and pepper
½ onion finely chopped
2 Tbs parsley, finely chopped
1 chilli, finely chopped
2 Tbs onion powder
For the sauce:
2 Tbs olive oil
½ onion, finely chopped
1 cup tomato sauce
4 Tbs red wine vinegar
¼ cup Worcestershire sauce
4 Tbs brown sugar
4 Tbs water
To assemble:
1 French baguette
100g cheddar cheese, grated
Instructions
Cook the meatballs on the braai or in an oiled pan until browned.
In a pan, heat oil, then add the onion and saute until softened. Add all the other ingredients for the sauce to the pot, bring to the boil and simmer until thick.
Add the cooked meatballs to the sauce, then stir to coat.
Cut the baguette into 4 pieces, then cut a slit in the top of each piece to nestle the meatballs onto.
Spoon the meatballs and sauce onto the bread, then sprinkle with cheese.
