Isigwamba with Curried Pork Chops


Serves 4

1 cup Iwisa Maize Meal
3 cups water
1 Tbs oil
2 cups chopped spinach
1/2 tsp salt
4 Pork chops
1 Tbs curry powder
2 peppers, chopped
1 cup cream


Mix maize meal with water.
Heat oil in a pot, then add the spinach and cook until wilted.
Add salt and maize mixture, then stir over low heat until thickened.
Cover and allow to simmer gently for 20-30mins.
Sprinkle pork with a bit of the curry powder and season with salt. Heat more oil in another pan, then fry the chops until golden on each side then remove and set aside.
Add peppers to the pan, then sauté until softened, deglaze with 1/2 cup water, then add cream and bring to the simmer.
Return the pork back to the pan, cover and simmer for 5 minutes or until chops are cooked through. Season to taste before serving with the spinach pap.
