Cinnamon Buns
Ingredients
Makes 12
For the buns:
2 eggs
250ml milk
100g salted butter, melted
10g active dry yeast
1/4 cup sugar
4 cups cake flour
For the filling:
100g softened butter
1 cup brown sugar
2 tsp ground cinnamon
For the topping:
250g cream cheese
1/4 cup icing sugar
1 tsp vanilla
Instructions
Mix together the eggs, milk, melted butter, sugar and yeast. Add flour and mix to form a dough. Knead dough until smooth and elastic.
Drizzle oil in a bowl, then roll the dough in the oil before covering and leaving to rise until doubled in size.
Once doubled, knead dough back to original size, then roll out into a rough rectangle (about 1/2cm thick).
Spread softened butter over the dough, then sprinkle with combined cinnamon and sugar.
Gently roll a rolling pin over the sugar to press into the dough.
Roll the dough into a log, starting from the long edge. Pinch the seam to close.
Cut into 12 pieces, then place into a buttered oven dish, cover and leave to rise for 30 minutes.
Preheat oven to 180c
Bake the buns for 30 minutes until golden and risen.
Remove from the oven then leave to cook for 10 minutes.
Mix together the cream cheese, vanilla and icing sugar.
Spread topping over the slightly cooled buns.
