Brown-Butter Cauliflower Cheese


Serves 6 – 8

100g butter
1/4 cup flour
3 cups of milk
200g grated cheese (100g mature cheddar + 100g mozzarella)
Salt & pepper
1 head cauliflower, cut into florets


Place butter in a saucepan.
Melt over medium heat, once melted, increase the heat and allow the butter to bubble and sizzle until a nutty brown colour.
Remove from the heat, then stir in the flour until well incorporated.
Whisk in the milk, then simmer over medium heat for 8 minutes to cook the sauce.
Season with salt and pepper to taste.
Stir in the raw cauliflower and cheeses (leaving a bit behind to sprinkle on top).
Transfer to an oven dish, then sprinkle with remaining cheese.
Cover and bake in a preheated 200c oven for 25 mins,
Remove the cover then bake for another 10 minutes to brown the top.
