Spiced Coconut Frozen Yoghurt Popsicles

 

500ml Full Cream Plain Yoghurt

125ml coconut milk

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

1 tsp vanilla extract

Zest of one orange, finely grated

1/2 cup maple syrup

100g ginger biscuits, crushed

2 Tbs desiccated coconut

2 Tbs coconut oil, melted

 

Whisk together the yoghurt, coconut milk, cinnamon, nutmeg, ginger, vanilla, orange zest, vanilla and maple syrup, then spoon into popsicle moulds, leaving a space at the top for the cookie topping.

Mix together the crushed ginger biscuits, desiccated coconut and coconut oil then sprinkle onto the coconut the yoghurt layer.

Push in the popsicle sticks, then freeze completely until set.
