Sage & Lemon Roast Chicken
6 fresh sage leaves, finely chopped
1 Tbs chopped fresh thyme
1 lemon, zested
2 garlic cloves, crushed
1 chilli, finely chopped
4 Tbs butter, softened
Salt and pepper
1 whole free Range chicken
Preheat oven to 200C
In a bowl, mix together the sage, thyme, lemon zest, garlic, chilli and butter, then season with salt and pepper.
Loosen the skin from the breast, then stuff the butter under the skin.
Season the whole bird with salt and pepper, then drizzle the chicken with olive oil and rub onto the surface of the skin
Place the chicken in a roasting tray, then roast for 20 minutes per 500g weight of the chicken. Remove from the oven, cover with foil, then leave to rest for 20 minutes before carving and serving.
