Rose & Raspberry Cordial

 

1 ½ cups white sugar

Juice of 1 lemon

1 ½ cups water

300g fresh raspberries

2 Tbs rosewater

Sparkling water or Sparkling Wine to serve

 

Place sugar, lemon juice and water in a pot over medium-low heat and stir until the sugar has dissolved.

Add raspberries and increase the heat to bring to a simmer.

Simmer for 10 minutes then remove from heat and stir in rosewater.

Press mixture through a fine sieve to remove the seeds.

Store cordial in a clean, sterilized bottle.

To serve, fill a glass with ice, add some cordial, then top with the sparkling water or sparkling wine.

Garnish with some organic rose petals (optional)
