Roasted Meatballs with Sweet Potatoes

Serves 4


500g minced beef

1 garlic clove, crushed

2 grated courgettes

1 grated carrot

2 tsp ground cumin

2 tsp ground coriander

1 Tbs paprika

Salt and black pepper

¼ cup rolled oats

3 sweet potatoes, cut into chunks

1 Tbs olive oil

1 Tbs fresh thyme


Tzatziki to serve


Preheat the oven to 200C.

Combine the mince, courgette, carrots, cumin, coriander, paprika, seasoning and Oats well, then shape into 8 meatballs.

Place meatballs onto a greased oven tray, then arrange the sweet potatoes around the meatballs.

Drizzle with olive oil, then sprinkle with thyme.

Roast for 15-20 minutes until the meatballs are cooked through and the sweet potato is tender.

Serve with a dollop of tzatziki.
