Roast Pork & Apples

 

Serves 4

2 Tbs sea salt flakes

1 tsp Chilli Flakes

2 tsp aniseed

4 tsp dried sage

1 tsp cumin seeds

1 tsp black peppercorns 

2kg pork belly

4 apples

1/2 lemon

Preheat oven to 240c

Grind together the spices to form a coarse spice rub (I do this using a pestle and mortar… but if you don’t have one, use ready-ground spices for this recipe)

Reserve 1 tablespoon of the spice mix, then rub the remaining spice all over the pork to coat.

Place the pork into the oven and roast for 1 hour – the crackling with become puffed and golden. 

Turn the temperature down to 180c.

Cut the apples in half, then squeeze over the juice of half a lemon and toss in the reserves spices.

Arrange the Apple halves in the roasting on with the pork, then roast in a 180c oven for 1 hour.

Serve pork sliced with your choice of veggies and the roasted apples alongside.
