Roast Baby Veg with Citrus Dressing

Serves 4-6

300g baby turnips, quartered

300g baby carrots, halved

2 Tbs olive oil 

Salt and pepper 

150g baby peppers, halved and deseeded

150g baby gems, quartered

150g baby broccoli 

2 sprigs thyme

1 sprig rosemary

2 sprigs oregano

For the dressing:

1 orange, zested and juiced 

1 lemon, zested and juiced

1 tsp grain mustard

4 Tbs olive oil

Preheat oven to 200c

Place the turnips and carrots into a roasting tray, drizzle with 2 tablespoons of olive oil, season with salt and pepper, then roast for 20 minutes.

Add the remaining veg and herbs to the roasting tray and toss well, then return to the oven for 30minutes to roast until the veg is cooked through.

Whisk together the dressing ingredients and season with salt and pepper.

Pour dressing over the warm veggies, then toss well to coat.
