2 cups cake flour
1 tsp salt
1 Tbs baking powder
¼ cup castor sugar
1 ½ cups buttermilk
¼ cup butter, melted
1 tsp vanilla extract
Canola oil for frying
Icing sugar to serve
Mix together the flour, salt, baking powder and castor sugar.
Whisk together the eggs, buttermilk, butter and vanilla then stir into the dry ingredients and mix well.
Place the batter into a piping bag or plastic bag.
Place oil into a wide lipped pan and heat to 190C.
Snip the end of the bag, then drizzle some batter into the oil to form a lacy funnel cake.
Leave to fry until golden and puffed, then flip over to colour the other side.
Remove from the oil and place onto kitchen paper to drain excess fat.
Sift over a generous amount of icing sugar to serve.
