Raw Vegan Date Bars

200g raw mixed nuts

50g prunes

100g dates

50g dried apricots

½ cup desiccated coconut

50g dried mango

½ cup sesame seeds


Place all the ingredients (except the sesame seeds) into a food processor and pulse until mixture comes together and is sticky.

Line a loaf tin with baking paper, then sprinkle with half the sesame seeds.

Press mixture into the tin, then sprinkle the rest of the sesame seeds on top.

Slice the mixture into bars.

Wrap bars in wax paper and store in an airtight container.
