Rainbow Sugar Cookies
1 cup butter, softened
1 cup Huletts yellow sugar
1 cup Huletts Rainbow sugar crystals
2 tsp vanilla extract
3 cups cake flour
1 tsp bicarbonate of soda
1/2 tsp salt
2 cups Huletts Rainbow sugar crystals
Preheat oven to 175̊ C.
Cream together the butter, yellow sugar and Rainbow sugar until butter is pale.
Beat in the eggs one at a time, then stir in the vanilla.
Mix together flour, bicarbonate of soda and salt.
Combine dry and wet ingredients to form the cookie dough.
Form tablespoon fulls of dough into balls, then roll in the rainbow sugar and place onto a baking tray and press down lightly to flatten.
Bake for about 18-20 minutes in the preheated oven, or until edges are golden brown.
