Plum & Pear Oat Crumble

 

Serves 4-6

4 pears, cut into 8 wedges

4 plums, cut into 6 wedges

¼ cup castor sugar

1 tsp vanilla essence

 

For the crumble:

2 cups rolled oats

1/2 cup cake flour

1/2 cup ground almonds

¼ cup muscovado sugar

1/2 cup melted butter

 

In a roasting dish, combine the pears, plums, castor sugar and vanilla.

In a bowl, combine the oats, flour, ground almonds, muscovado sugar and melted butter then crumble onto the fruit mixture.

Bake at 180C for 35 – 40 minutes or until the crumble is golden brown and the fruit is tender.

Serve with vanilla yoghurt and toasted almonds
