Peanut Oat Cups
Makes 16
1 cup desiccated coconut
½ cup salted peanuts
1 ½ cups Oats
12 pitted dates, chopped
½ cup peanut Butter
200g dark chocolate, melted
Chopped salted peanuts for topping
Line a mini-muffin tin with mini paper liners.
In a food processor, combine the coconut, peanuts, oats and dates then blend until the mixture is fine.
Add the peanut butter, then blend until mixture is smooth.
Press the mixture into the muffin cases, leaving space at the top for the chocolate.
Top each cup with a spoonful of chocolate, then sprinkle with nuts.
Refrigerate until set.
