Orange & Ginger Glazed Gammon
1.8 – 2kg gammon
3 cups ginger beer
2 cups water (plus more for topping up)
1 onion, peeled & quartered
2 bay leaves
3 sprigs fresh thyme
1 orange, juiced
1/2 cup dark brown sugar
Place the gammon into a pot along with the ginger beer, water, onion, bay leaves and thyme. Then place on the stove and bring to a boil. Turn down to a simmer, then cook for 1hour, topping up the pot with water.
Once gammon is cooked, remove the skin/rind and any excess fat, then score with a sharp knife.
Preheat oven to 200c
Mix together the orange juice and sugar, then spoon half the mixture onto the the pork.
Roast the gammon for 15minutes, then spoon over the remainder of the sugar and orange mixture.
Roast for another 20-30 minutes until golden and sticky.
Slice to serve.
