Lemon & Herb Lamb Chops
8 Lamb Loin chops
Salt and pepper
1 tsp chopped garlic
1 lemon, zested and juiced
4 Tbs chopped fresh herbs
4 Tbs olive oil
Season lamb chops with salt and pepper, then place into a cold pan, fat-side-down. Turn on the heat, then allow the chops to cook on the fat side until the fat tenders and becomes crispy and golden.
Turn the chops onto the side, then fry for two minutes per side (for medium… if you want them more done, cook for longer).
Mix together the garlic, lemon zest, juice, herbs, olive oil, salt and pepper, then drizzle over the cooked lamb chops.
Cover with foil and leave to rest for 5 minutes before serving.
