Gingerbread Men Cookies

 

100 g butter, softened

175 g brown sugar

4 Tbs of golden syrup

1 medium egg

350 g cake flour

2 tsp of ground ginger

1 tsp bicarbonate of soda

Pre-heat the oven to 180°C.

Cream together butter and brown sugar

Beat in the golden syrup and egg until combined.

Mix together flour, ginger and bicarbonate of soda then stir into the wet ingredients to form the cookie dough.

Wrap in cling film and leave to chill in the fridge for 30 minutes.

Using a floured rolling pin, roll out the dough to about 5mm thick.

Cut out cookies with a floured cutter.

Place the cut out cookies onto a greased or non-stick baking tray.

Bake cookies for about 15 minutes or until golden brown.

Remove from the oven and allow to cool completely.
