Creamy Oats with Honey Roasted Plums

Serves 4

For the plums:

6 ripe plums, halved

4 Tbs honey

1 orange, Juiced

 

For the Oats:

2 cups milk

1 cup water

¼ tsp salt

1/4 cup sugar (or to taste)

1 ½ cups Rolled Oats

 

Preheat the oven to 180C.

Place the plums into a roasting tray, then drizzle with the honey.

Squeeze over the orange juice, then place into the oven to roast for 20 minutes.

Place the milk, water, salt and sugar into a pot, then bring to the boil.

Stir in the oats, then bring to a simmer.

Cover, then cook for 10 minutes, stirring often until the oats is cooked through.

Remove from the heat, serve topped with the roasted plums and a scattering of nuts or seeds for added crunch.
