Choc Chip mayonnaise Cake
Makes a 20cm round cake
1 cup mayonnaise
1 cup milk
1 tsp vanilla extract
1 cup castor sugar
2 cups cake flour
2 Tbs baking powder
1 cup dark choc chips
250g softened butter
2 ½ cups icing sugar
½ cup cocoa powder
Choc chips for decorating
Preheat oven to 180C, grease and line a 20cm round cake tin.
Place the mayo, milk, vanilla, sugar, flour and baking powder in the bowl of an electric mixer, then mix on low speed to combine.
Turn the speed up to high, then beat the mixture for a minute.
Fold in the chocolate chips, then transfer to the prepared tin.
Bake for 35-40 minutes until the cake springs back when touched on the surface.
Remove from the tin, then cool on a rack
For the frosting, beat together butter, icing sugar and cocoa powder until smooth, add a little milk if the frosting is too thick.
Spread the frosting onto the cooled cake, then sprinkle with choc chips to decorate.
