Choc Chip Cookies
1 cup butter, softened
1 cup castor sugar
1 cup brown sugar (plus ¼ cup for sprinkling)
2 eggs
2 tsp vanilla extract
3 cups cake flour
1 tsp bicarbonate of soda
1 cup chocolate chips
Preheat oven temperature to 175° C.
Cream together the butter, castor sugar and 1 cup of brown sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla.
Mix together flour and bicarbonate of soda.
Combine dry and wet ingredients to form a dough then stir in the chocolate chips.
Use two teaspoons or floured hands to form cookies into balls then place onto a baking tray, leaving space between the cookies.
Press cookie balls down lightly with your fingers to flatten then sprinkle with the remaining brown sugar.
Bake cookies for about 10 minutes in the preheated oven, or until edges are golden brown.
