Apple Raisin Oat Cookies

 

Makes 30

 

450g butter, softened

2 cups brown sugar

2 cups white sugar

2 tsp vanilla

4 eggs

5 cups rolled oats

500g self raising flour

Large pinch of cinnamon

2 tsp baking powder

2 tsp bicarbonate of soda

150g raisins

100g green apples, grated

 

Preheat the oven to 180C.

Cream the butter, sugars and vanilla until light and fluffy.

Add eggs one at a time beating in between until combined.

Add oats, flour, cinnamon, baking powder, bicarbonate of soda, raisins and apple pieces and mix well to form a soft dough.

Drop teaspoonful’s onto greased cookie sheets and bake for 10 minutes or until golden but still soft.

Allow to cool, then store in an airtight container.
