Bacon & Red Lentil Soup


Serves 4-6

Prep Time: 10 minutes
Cooking Time: 1 hour

1 Tbs olive oil
200g streaky bacon, chopped
1 onion, chopped
2 carrots, chopped
2 Tbs garlic & Ginger paste
2 Tbs mild curry powder
2 potatoes, peeled & chopped
1 cup dried red lentils, washed
1L vegetable stock
Salt & pepper to taste

Plain Yoghurt & grated cheddar to serve (optional)


Heat olive oil in a large pot, add bacon, onion and carrot then sauté over medium heat for 5 minutes until bacon begins to brown.
Add ginger & garlic, curry powder
Stir and sauté for two minutes to toast the spices.
Add potatoes, washed lentils and stock.
Cover and simmer for 45 minutes or until lentils are cooked through.
Season to taste and serve topped with yoghurt & cheese.
