Frozen White Choc Mousse
30g unsalted butter
1/2 tsp vanilla extract
2 large eggs, separated
2/4 cups castor sugar
250ml fresh cream
Toasted coconut & fruit to garnish
Whisk together vanilla, egg yolks and castor sugar until light and fluffy.
Mix in the melted chocolate mixture, then fold in the whisked egg whites and then the cream – be careful not to over-mix so you don’t knock out all the air.
Transfer into a cling film lined loaf tin.
Freeze until completely frozen. Garnish with fresh fruit and toasted coconut.
