Apple Crumble Muffins

Ingredients

Makes 12

For the apples:
2 apples, peeled, cored & diced
2 Tbs water
1 Tbs sugar

For the crumble:
½ cup cake flour
60g softened butter
4 Tbs brown sugar
1/4 cup rolled oats
1/4 cup desiccated coconut
1/2 tsp ground cinnamon

For the muffins:
375g cake flour
30ml baking powder
15 ml ground cinnamon
125g castor sugar
140 ml vegetable oil
120ml full cream milk
2 large eggs
5ml vanilla extract

Instructions

Place the apples, water and sugar into a pot, then cook for 5 minutes until the apples have softened and the water has completely cooked away.
Set aside to cool.

Make the crumble by rubbing together the butter and flour, then mix in the sugar, oats, coconut and cinnamon. Set aside.

Preheat the oven to 180C .

Line a 12-hole muffin tin with squares of baking paper.

In a large bowl combine flour, baking powder, cinnamon and sugar.

Whisk together the oil, milk, eggs and vanilla, then add to the dry ingredients and mix until just combined.

Spoon the batter into the muffin cases, then sprinkle on the crumble mix.

Bake for 20- 25minutes or until the muffins are cooked through.
