Salmon, Noodles & Stir Fried Bok Choy


Serves 4

4 Salmon Portions
2 Tbs Chinese 5-spice
2 Tbs Olive Oil
1 Tbs garlic and ginger paste
4 Tbs soy sauce
2 Tbs Honey
100g cooked noodles/spaghetti
1 punnet baby bok choy, halved and washed
4 shiitake mushrooms, sliced
1 tsp sesame oil
1 Tbs sesame seeds
Salt and pepper to taste


Season the salmon with 5-spice.

Heat olive oil in a pan, then cook the salmon for 4 minutes on the skin side.

Whisk together the garlic & ginger paste, soy sauce and honey.

Turn the salmon, then spoon half of the sauce onto the salmon and cook for another 2 minutes on the flesh side.

Remove from the pan and set aside to keep warm.

Toss the cooked noodles into the salmon pan, add the remaining sauce and toss well to heat through.

Heat another pan, add more olive oil then toss in the mushrooms and bok Choy and stir fry on high heat until leaves begin to wilt.

Add sesame oil, sesame seeds and season with salt and pepper to taste.

Serve the salmon with the noodles and stir fried veggies.
