Raisin Rock Buns


Makes 8

260g self-raising flour
60g cold butter, diced
100g granulated sugar (plus extra Tbs to sprinkle on top)
50g raisins
1 Large egg
120ml milk
1 tsp vanilla


Preheat oven to 190c.

Rub together the self raising flour and butter until breadcrumb consistency.

Mix in sugar and raisins.

Make a well in the centre then add egg, milk and vanilla.

Mix until ingredients are combined.

Dollop large spoonfuls onto a greased oven tray, sprinkle each with sugar then bake for 15-20 minutes until golden and baked through.
