Choc Chunk Cookies

Ingredients

Makes about 24 depending on size

225g softened butter
1/2 cup castor sugar
1 cup brown sugar
1 tsp vanilla
2 large eggs
3 cups cake flour
1 tsp bicarbonate of soda
200g chocolate **

Instructions

Preheat oven to 180c

Cream together butter, castor sugar, brown sugar and vanilla until smooth.

Add eggs and beat until combined. Mix together flour and bicarb, then add to the wet ingredients and mix until almost combined before adding the choc chunks (** I use chopped chocolate bars or chocolate buttons, but you can use choc chips as well) then mix until dough is fully combined and the chocolate is evenly distributed.

Roll tablespoonfuls (or more if you want larger cookies) of dough into balls then place onto a lined baking tray.

Push the cookie balls down to flatten then bake for 15-20 minutes or until the cookies are golden and crisp around the edges.
