Zola’s Feasts Oxtail Stew


Serves 4-6

2kg oxtail
4 Tbs Zola’s Feasts Flavourbomb Spice Mix
2 Tbs oil
2 onions, chopped
2 bay leaves
2 garlic cloves, chopped
1 Tbs chopped ginger
1 Tbs Zola’s Feasts Fragrant Curry Powder
2 Tbs tomato paste
1 Tbs brown sugar
500ml beef stock
Salt and pepper to taste


Season the oxtail with the Zola’s Feasts Spice Mix and toss well to coat.

Heat oil, then brown the oxtail in the oil on all sides (you may need to do this in batches) then remove from the pot and set aside.

To the same pot, add onions then sauté over low heat until softened.

Add bay leaves, garlic, ginger, Zola’s Feasts Curry Powder and tomato paste, then sauté over low heat for a few minutes until fragrant.

Add the sugar and stock, stir and bring to a simmer.

Return the oxtail to the pot, cover and simmer for 3-4 hours (or until oxtail is tender) over low heat (You could also cook in a 160c oven).

Season to taste before serving.
