2 Tbs olive oil
1 coil of Boerewors
1 onion, diced
1 pepper, diced
4 fresh tomatoes, chopped
3 Tbs tomato chilli chutney
Salt and pepper
Cut the Boerewors into smaller sausages.
Heat oil in a pan, then brown the sausages on both sides.
Remove sausages from the pan and set aside.
To the same pan add onion and pepper and sauté until softened.
Add tomatoes, chutney, salt and pepper then sauté until tomatoes begin to break down.
Return Boerewors to the pan, then simmer gently for a few minutes.
Crack the eggs into the pan, then cover and cook over low heat until the eggs are cooked to your liking.
