4 Tbs Peri-peri sauce (I use the Checkers Forage & Feast Range)
3 Tbs honey
1 Tbs fresh thyme
2 chopped garlic cloves
Salt and pepper
8 chicken thighs and drumsticks
Mix together the peri-peri sauce, honey, thyme, garlic, salt and pepper.
Place chicken into roasting dish, then pour over the sauce and toss well.
You can now leave this to marinade if you have time.
Once ready to cook, place the chicken into the oven to roast for one hour, basting twice during cooking.
