Fluffy Blueberry Pancakes


Serves 4

2 cups cake flour
1/4 cup sugar
1 Tbs baking powder
1 tsp bicarbonate of soda
Pinch salt
1 1/4 cups Amasi / Buttermilk
2 Large eggs
4 Tbs sunflower oil


Whisk together flour, sugar, baking powder, bicarb and salt the set aside.

In another bowl, whisk together the Amasi, eggs and oil.

Add the wet ingredients into the fry ingredients, mixing just until combined (do not over mix)

Gently fold in the blueberries.

Heat pan, add a drop of oil, then wipe with kitchen paper.

Add spoonfuls of batter into toe pan to form the pancakes, then cook on medium heat until golden on one side and bubbling.

Flip and cook for a few more minutes on the other side until pancake is cooked through.

Serve pancakes stacked with your choice of toppings (I serve mine with maple syrup and extra blueberries)
